Eating Up the Freezer

Time to get ready for summer produce so I'm concentrating on using up stuff from the freezer. I have several bags of tomatoes that I froze whole, thinking I would can them later. I did make juice from some of them, but most of them are still in bags. Since we don't start getting tomatoes off the vines until late May or early June, I have some time to use those up. The problem is finding recipes for them. But last night I found this soup recipe from The Cabin Garden, and it was delicious. I can see me making this a couple of times a month, and it looks like it will easily convert to paleo. I put maple syrup in it tonight instead of the sugar, but I did use wheat flour because I didn't have a good substitute.

Yum!

  1. I have been making homemade tomato soup, but with canned tomatoes. I use garlic, salt, pepper, vegetable stock (watch some have sugar in them), and thyme. Sometimes I throw in a stock of celery. I throw it in my Vita Mix and BAM soup! I found that thyme gives it the taste I had been looking for - something like what Campbell's tomato soup taste like. I didn't know you could freeze whole tomatoes! That is good to know!

  2. I'm laughing at the title. This is exactly what we have started doing. As I start planting seeds, we get serious about what's in the freezer

  3. That's what we need to do. But we need to eat through the freezer so that we can clean it out!! That's a chore I hate more than anything else. It is so frosted up that I cannot remove the baskets on one side, which means I really have trouble getting the foods under those baskets. But being president of the Procrastinators of the World - I let it slide "a day." That soup looks really good.

  5. I haven't tried thyme, but I did think of putting basil in while cooking next time, instead of just as a garnish. I love tomato basil bread. Marti

  6. Smile. I should have drawn a cartoon of a monster eating the refrigerator. I haven't even started planting seeds yet, just looking at the calendar for planting dates. We're supposed to have a warm weekend. Perfect for tilling the garden. Marti

  7. I've had that happen. This freezer is a frost free, which they say causes freezer burn faster than one with frost, but I can't tell the difference between it and the chest freezer which isn't frost free. We just keep meat in it so I go years without ever really cleaning it out. Marti

  10. If he doesn't like tomatoes, you may not get him to eat it. I put it in a regular blender because I don't have the immersion blender she mentioned but the seeds remained whole. I don't mind that but I did feel them. Marti
